Welcome! My name is Sarah Walley. My passion is baking French macarons. Unlike the coconut macaroon, a French macaron is a delightful almond meringue cookie that comes in a variety of colors and flavors. They’re often filled with ganache, jam, or buttercream. Ideally, a macaron has a slightly crisp shell and a soft, marshmallowy texture. They’re just a bite of luxury.
In addition to baking macarons, I also design dessert tables for weddings, parties, bar and bat mitzvahs, showers, and corporate functions in western New York. My focus is working one-on-one with my clients to achieve their vision. Whether it’s based on a color palate, a design element or a theme, I can create a dessert table that will reflect your style. Since January 2010 I am trying to make Macaron in my kitchen and without any result I could call Macaron, only Maca-very-wrongs.

Rui, there are so many factors that can make your macarons work or not work. Where the heat source in your oven is located, the moisture content of your almond flour, whether you use fresh egg whites, aged egg whites or liquid egg whites. Keep experimenting, you’ll eventually find the combination that works well for your environment!! (If it makes you feel better, I wasn’t able to bake mine at home without a pizza stone.)
Sarah, Your mom sent me the article that ld me to your website. I am very impressed with all that you are doing. We were in Canada this summer at a city called Saganay(unsure of spelling now) and they had a gelato shop and they also sold macarons. I tried a couple of them and I really liked yours so much better. The salty caramel is my favorite of yours….
